Before my husband and I had children, we went out to eat all the time, and one of our go-to places was The Olive Garden. Their Capellini Pomodoro was one of my go-to items on their menu. Years later, we no longer go out to eat like we used to and I believe this is no longer on the menu. Fortunately, it was such a simple dish that I was able to come up with my own recipe! I hope you enjoy my “copy-cat” version of this beloved dish.
Capellini Pomodoro
Ingredients
16 oz. angel hair (capellini) pasta
½ c. olive oil
6 cloves garlic, chopped
16 fresh basil leaves, chopped
4 vine ripened tomatoes, cut into ½” pieces
salt and pepper, to taste
Directions
1. Prepare pasta according to package directions.
2. In a sauté pan, add cooked pasta and olive oil. Toss until pasta is well coated.
3. Toss pasta with tomatoes, garlic, and basil until well combined and heated throughout.
4. Season with salt and pepper and serve.
