Fudge is one of my absolute favorite desserts around the holidays, and a few years ago I was able to create this recipe for a dairy-free version. It is just as sweet and rich as traditional fudge.
Chocolate Fudge
Ingredients
10 oz. dairy-free semi-sweet chocolate chips
3-4 Tbsp. coconut oil
1 c. coconut milk
3 c. powdered sugar
1/3 c. cocoa powder
1 Tbsp. vanilla extract
1 1/2 c. chopped walnuts (optional)
Directions
1. Heat coconut milk in microwave safe bowl for 1 minute.
2. In a separate bowl, place the chocolate chips and pour the hot coconut milk over the chocolate chips.
3. Add coconut oil and stir until melted.
4. Whisk in powdered sugar, cocoa powder, and vanilla extract until smooth. Stir in walnuts, if desired.
5. Line an 8×8 baking dish with parchment paper. Pour the fudge mixture into the pan.
6. Place the fudge in the refrigerator for several hours, or overnight, to firm.
7. Once firm, remove the fudge from the pan and cut into pieces.
