You’ve heard of Welsh Rarebit, but have you tried Irish Rarebit? Serve it on toasted Irish Soda Bread for the full Irish experience.
Irish Rarebit
Ingredients:
4 c. mild cheddar cheese, shredded
1/4 c. butter
1/2 c. whole milk
2 tsp. apple cider vinegar
2 tsp. dry mustard
sea salt and pepper to taste
8 slices of Irish Soda Bread or whole wheat bread
Chopped dill pickles, for garnish
Directions:
1. Stirring frequently, combine cheese, butter, and milk in a saucepan over medium heat until creamy and smooth.
2. Add vinegar, mustard, salt, and pepper to the cheese sauce.
3. Toast one side of the bread, then, place on a baking sheet, uncooked side facing up. Pour the cheese sauce over the bread.
4. Place under a preheated broiler for 2-3 minutes, until golden and bubbling.
5. Garnish with chopped pickles and serve warm.
