Banana Muffins w/ Maple Glaze

I’m guilty of often having overripe bananas sitting on my counter. This recipe is a tasty way to use them up! This recipe is also dairy-free and egg-free.

Banana Muffins w/ Maple Glaze
Makes 12 muffins

Ingredients
2 c. flour
1 c. sugar
1 tsp. baking soda
1/2 tsp. baking powder
1/2 tsp. cinnamon
1/2 tsp. nutmeg
1/2 tsp. salt
2 bananas, mashed
1/4 c. vegetable oil
1/2 c. plant-based milk
2 Tbsp. apple cider vinegar
1 Tbsp. vanilla

Directions
1. Preheat the oven to 350 degrees. Line muffin pan with cupcake liners.
2. In a medium bowl, whisk together the flour, sugar, baking soda, baking powder, cinnamon, nutmeg, and salt.
3. In a small bowl, whisk together the mashed bananas, oil, plant-based milk, apple cider vinegar, and vanilla.
4. Add the wet ingredients to the dry ingredients and whisk until just combined.
5. Fill the cupcake liners with about 1/4 c. of batter.
6. Bake for 15 to 17 minutes, or until a toothpick inserted into the center of the muffin comes out clean.

Maple Glaze
Ingredients
1 c. powdered sugar
1 1/2 Tbsp. maple syrup
1 Tbsp. plant-based milk

Directions
1. In a bowl, whisk all ingredients together until well combined.
2. Either dip the top of the muffins in the glaze or drizzle it over the muffins.
